Crockpot Chicken Verde


Crockpot Chicken Verde

Ok guys here is the super simple recipe that was inspired by a Trader Joes sample. I just tweaked it a little so I could make the chicken in my crock pot :)

This is what I used for my house of 6,  adjust to your needs accordingly

10 chicken tenders (I used frozen)
1 small onion diced
4 celery stalks diced
1/2 cup frozen roasted corn (optional)
Tsp of garlic powder
1/2 jar Green salsa (I used Trader Joes, see pic below but any you like would do)

Put all of these in the crockpot and cook on low 7-8 hours or high 3-4 hours and Tadah a super yummy meal! My whole family loved it and everyone had seconds 😉 

I served it with brown rice (used my rice cooker) for the family and cauliflower rice for myself <3

For my cauliflower rice I used this frozen calulflower from Trader Joes but you could also make your own from fresh. I just put about a tsp of coconut oil in the pan, added the cauliflower, garlic powder and a tiny bit of sea salt. Cooked that for about 5 minutes. It was fantastic :)
