Crockpot Chicken Verde


Crockpot Chicken Verde 
(pictured above with Cauliflower Rice)

Ok guys here is the super simple recipe that was inspired by a Trader Joes sample. I just tweaked it a little so I could make the chicken in my crock pot :)

This is what I used for my house of 6,  adjust to your needs accordingly

10 chicken tenders (I used frozen)
1 small onion diced
4 celery stalks diced
1/2 cup frozen roasted corn (optional)
Tsp of garlic powder
1/2 jar Green salsa (I used Trader Joes, see pic below but any you like would do)

Put all of these in the crockpot and cook on low 7-8 hours or high 3-4 hours and Tadah a super yummy meal! My whole family loved it and everyone had seconds 😉 

I served it with brown rice (used my rice cooker) for the family and cauliflower rice for myself <3

For my cauliflower rice I used this frozen calulflower from Trader Joes but you could also make your own from fresh. I just put about a tsp of coconut oil in the pan, added the cauliflower, garlic powder and a tiny bit of sea salt. Cooked that for about 5 minutes. It was fantastic :)

No Bake Shakeology Vanilla Snowballs

Okay how many of you are guilty of buying any of those 100 calorie snack packs thinking you were being healthy? Well, surprise....you're NOT! Those little packs are full of sugar, refined carbohydrates and empty calories that your bodies cannot use. They don't have an ounce of protein in them and all they will do is leave you feeling hungry and wanting more in an hour or so, if not sooner. And points? Well sure they're only a few "points" but what does that teach you? Nothing really. Just that you can eat foods that are low in points but it doesn't mean you're making good choices or eating healthy!  But, enough of my WW rant. Let's get to the real point of this post....the recipe for these delicious Shakeology Protein Snow Balls! 


THESE are what I like to reach for when I'm hungry and want something sweet. They're dense, nutritious and CLEAN!  Not to mention they're easy to make and involve no baking! So, have at it and tell me how you like them!  


No Bake Shakeology Vanilla Snowballs
Ingredients
  • 1-1/2 servings Vanilla Shakeology
  • 1/2 cup almond flour (or any gluten-free flour or whole wheat flour)
  • 1/2 cup old-fashioned rolled oats
  • 1/4 cup natural peanut butter or almond butter
  • 1/3 cup unsweetened almond milk (can use low-fat milk)
  • 1/4 cup unsweetened shredded coconut
Instructions
  1. Combine vanilla Shakeology, almond flour, and oats in a medium bowl. Mix together.
  2. Add almond butter and almond milk and mix well with a rubber spatula or clean hands until it forms a thick batter.
  3. Roll mixture into 15 balls, each about 1-inch in size.
  4. Roll balls in coconut (optional).
Approximate Macros
Cal: 80 Fat: 5g Protein: 4g Carbs: 5g Fiber: 2g 
Prep Time: 15 minutes
Serving Size: 1 ball
Total Time: 4 minutes
Yield: 15 balls

Reflections from a funeral

Today on a very rainy So Cal day my family and I attended a funeral. It was for a very beautiful high spirited lady, my husband's grandmother Helen. I did not know her well even though I have known her more than half my life. I did get the opportunity to know her a bit more today and wanted to share my take away.

As an almost silent observer today due to the hustle and bustle that gatherings like this bring, I had some great time of reflection. Helen lived a long life of 89 years, more than the average you might say. As a young person it is hard to imagine living for 80-90 or more years. But as I watched and listened I realized just how FAST those years go, whether you want them to or not. In good times and bad, the clock just keeps ticking. 

I loved hearing the stories and good memories from her children and grandchildren, learning more about this woman who had lived on this earth for 89 short years. She was beautiful and spunky and loved by all. I loved watching my children hear a piece of their family history too.

I share this because today I was reminded again to live life. Not for fame or for glory or fortune, none of which you get to take with you, but for the life God has given you here, now and today. We don't know what tomorrow brings so today is all we have. Tomorrow you may be gone and your stuff will belong to someone else.

So lets make the most of our todays.
